The Quiet Start of June — Mulberry Picking and Home Roasting – 조용히 시작된 6월, 오디를 따고 커피를 볶았어요

June begins without announcement.

The days grow longer little by little, the green around the house deepens, and then one morning, the mulberries are ready.

Dark purple and heavy on the branches, they stain my fingers before I have picked even three.

There is a mulberry tree at the edge of our yard. Every year, it produces more fruit than we could ever use.

Every year, I tell myself that this time I will do something proper with them.

And every year, I end up eating most of them outside, standing beneath the tree and picking them straight from the branches.

There is something satisfying about eating fruit where it grew.

No plate, no preparation.

Just the shade of the tree, purple fingertips, and the taste of early June.

This year, I managed to save some.

I made a simple mulberry syrup, poured it into a bottle, and placed it in the refrigerator.

For a brief moment, I felt unusually organised.

Inside the house, the coffee roaster was already warming up.

Home roasting is one of those things that looks complicated from the outside.

Once you begin, however, much of it comes down to paying attention.

The green beans go in.

The temperature rises.

Then you wait for the first crack.

At first, the sound is quiet. Soon it becomes clearer and more insistent, a little like popcorn popping somewhere nearby.

From there, you decide how much farther to take the roast.

A few seconds can change the direction of the flavour.

I usually prefer a medium roast.

I like coffee that still carries some brightness before it moves toward darker and heavier flavours.

Not too light, not too deep.

Coffee that feels right for the morning in front of me.

While the beans cooled, the scent of freshly roasted coffee slowly filled the room.

Outside, the roses were at their peak.

Their branches were full, and the garden seemed to have entered summer before I had fully noticed.

The air carried the scent of flowers, leaves, and the first warm days of June.

Nothing in particular announced the change of season.

The mulberries simply ripened.

The roses opened.

The coffee beans cracked inside the roaster.

June in the Korean countryside often begins this way.

Abundant, unhurried, and almost unnoticed.

It asks for very little.

Only that we step outside, look closely, and notice what has already arrived.

6월은
별다른 예고 없이 시작됩니다.

낮이 조금씩 길어지고,
집 주변의 초록이 짙어지다가

어느 아침 밖에 나가보면
오디가 익어 있어요.

가지마다 묵직하게 매달린
짙은 보라색 열매들.

세 알도 채 따기 전에
손끝은 벌써 보랏빛으로 물듭니다.

마당 끝에는
오디나무 한 그루가 있어요.

해마다 우리가 다 먹을 수 없을 만큼
많은 열매를 내어줍니다.

매년 올해는 꼭
무언가 제대로 만들어봐야지 생각하지만,

막상 오디가 익으면
대부분은 나무 아래 서서
가지에서 바로 따 먹게 됩니다.

열매가 자란 자리에서
그대로 따 먹는 일에는
작은 즐거움이 있어요.

접시도 필요 없고,
따로 준비할 것도 없습니다.

나무 그늘과
보랏빛으로 물든 손끝,

그리고 입안에 번지는
초여름의 맛이면 충분해요.

올해는 조금 남겨두었습니다.

간단하게 오디 시럽을 만들어
병에 담아 냉장고에 넣었어요.

그것만으로도 잠시
무척 부지런하게 하루를 산 것 같은
기분이 들었습니다.

집 안에서는
커피 로스터가 예열되고 있었어요.

홈로스팅은 밖에서 보면
조금 복잡한 일처럼 보입니다.

하지만 막상 시작하고 나면
대부분은 잘 살피고 기다리는 일이에요.

생두를 넣고,
온도가 오르기를 기다립니다.

그리고 첫 번째 크랙 소리에
귀를 기울여요.

처음에는 조용하다가
조금씩 또렷해지는 소리.

어딘가 가까운 곳에서
팝콘이 터지는 것처럼 들립니다.

그 소리가 시작되고 나면
얼마나 더 볶을지 정해야 해요.

몇 초의 차이로도
커피의 맛과 향은 달라집니다.

나는 미디엄 로스트를 좋아합니다.

어둡고 묵직한 맛으로 넘어가기 전,
아직 산뜻함이 조금 남아 있는 커피.

너무 가볍지도 않고,
너무 깊지도 않은 맛.

그날의 아침에
잘 어울리는 커피를 좋아해요.

볶은 원두가 식어가는 동안
갓 볶은 커피 향이
천천히 집 안에 퍼졌습니다.

밖에서는 장미가
한창 절정을 지나고 있었어요.

가지마다 꽃이 가득했고,
내가 미처 알아차리기도 전에
정원은 이미 여름으로 들어서고 있었습니다.

공기에는 꽃과 잎,
그리고 막 시작된 6월의 온기가
함께 섞여 있었어요.

계절이 바뀌었다고
알려주는 특별한 신호는 없었습니다.

오디는 그저 익었고,
장미는 피었고,

로스터 안에서는
커피콩이 작은 소리를 내며 갈라졌습니다.

한국 시골의 6월은
대체로 이렇게 시작됩니다.

풍성하지만 서두르지 않고,
조용해서 자칫 지나치기 쉬운 모습으로.

6월은 우리에게
많은 것을 요구하지 않습니다.

다만 밖으로 나가
조금 천천히 바라보고,

이미 도착해 있는 것들을
알아봐 달라고 할 뿐입니다.
